RECIPE - Chocolate Ganach

  • Put the chopped chocolate into a medium heatproof bowl.
  • In a small saucepan, heat the heavy cream to just shy of a boil over medium heat.
  • Immediately pour the cream over the chopped chocolate. Let it sit for a minute.
  • Using a rubber spatula begin to slowly stir the chocolate from the center in a circular motion. Gently stir for about 2 minutes to make sure the ganache is emulsified.
